Pin-ter-vention: Slow Cooked Goodness


With all the rainy weather we have been having, it's been perfect for slow cooking!
Below are two recipes from Pinterest that I've tried recently.


YUMMY
{Slow Cook Beef Goulash}
  Adapted from Adora's Box's Beef Goulash

  • 500g braising steak, cut into cubes
  • 500g of Veggies - Capsicum, Zucchini and Carrot
  • flour seasoned with salt and pepper for dredging
  •   4 tbsps. olive oil
  • 3 cloves of garlic, crushed
  • 2 medium onions, sliced
  • 1 tbsp. paprika
  • 2 tbsps. tomato paste
  • 2 c. beef stock
  • 1 tsp of dry thyme
  • 1/4 c.  sour cream
Slice the beef into approximately 2"x1"x1/4 thick slices and dust lightly with the seasoned flour. Shake off the excess. Brown, a few at a time, in a mixture of the olive oil. Set aside. In the same pan, saute the garlic for 1 minute, then add the onions and cook until soft. Add the paprika and the tomato paste. Blend well. Set aside. Cook the Veggies in the same pan until slightly brown. Transfer to an oven proof casserole then add the beef, onion mix, the 2 c. of boiling stock and the thyme. Stir gently then cook in the oven for 1 hour and fifteen minutes or until the beef is tender. When done, stir in the Sour cream. Serve with boiled potatoes or rice.

Great with Jam or Honey.


  • Grease a deep metal or glass bowl or 1 lb coffee can (we use a glass 18 cm Pyrex soufflĂ© dish); turn slow-cooker on high to preheat.
  • Dissolve yeast in water; combine with milk, oats, salt, oil, honey, egg, and wheat germ.
  • Add flour and knead until smooth and elastic, about 5 minutes.
  • Turn dough immediately into bowl or can; cover LOOSELY with foil.
  • In bottom of slow-cooker, place 1/2 cup of water and a trivet or some crumpled foil.
  • Place can or bowl on this; cover and bake on High for 3 hours.
Note: sides of bread brown and crisp beautifully, top will slightly brown and be soft to touch.
Yield: 1 medium sized loaf of bread.

    PIN-TER-VENTION: Choc Brownie Cake

    I've been playing around with baking treats that are high in protein and low in carbs and sugar. Using protein shakes to make tasty baked goods, is no easy feat, I've tried a few recipes and had them turn out just plain blakkkk. I discovered this recipe on Pinterest last week and gave it a go using pureed fresh fruit instead of  baby food, 2 whole eggs instead of 4 whites, and my BGTY Vanilla Shakes. It worked a treat. I've made two batches so far, one with Banana, one with Strawberries.

    Pin-ter-vention: Choc-Peanut Cookies

    Today I want to share with you, and my friends over at the Pinterest party the protein cookies I made this afternoon for a healthy snack option. They are based off a recipe I found on Pinterest.  I added cocoa to mine to make them choc-peanut cookies and used my 'Vanilla Be Good To Yourself Protein Shake' in them. Here's how they turned out:

    For those that don't know, six months ago, I made a decision to commitment to eating healthy and exercising regularly with the goal of getting fit and healthy and getting rid of some {quite a bit} of extra weight.  It's been a while since I've done a blog update about my weight loss journey, so I'll tell you a little bit about it thus far. In order to stick to my goal to get fit and healthy, I sort out help from the local pharmacy.  I've been taking meal replacement -protein shakes and bars- for some meals and eating a balanced plate for two of my main meals, along with two to three healthy snack through the day. I've also been doing regular exercise, which helps a lot.  I see an Amcal weight management consultant each week who weighs and measures me and takes my body fat reading. She is there to answer any questions I may have about the exercise and eating program.  She also offers support and accountability. So far it's working out great. In the last 6 months I have lost 13.9kg, which works out to be over 500g per week. I'm really happy with the slow and steady weight loss and how much better I'm feeling.



    Now to get back to painting, I'm working on these two pieces today for an upcoming show.

    Pin-ter-vention: Oven Baked Goodness

    I'm a big fan of Pinterest, as many of my loyal followers would know, I use it for art inspiration, craft ideas and healthy recipes. Last week I got addicted to making KFC Style Oven Baked Chicken and Oven Roast Veggies, I prepared the meal 3 times and it was a BIG HIT! Here are the pins I got the recipes from:






    And here is how I made it (the third time):


    As you can see, I adapted the Broccoli recipe and added other veggies.
    Here's what I did:

    Best Ever
    {Oven Roast Veggies}
     adapted from The Amateur Gourmet's The Best Broccoli of Your Life


    1. Cut veggies.
    Green Beans, Carrots, and Capsicum into thin strips.
    Broccoli and Cauliflower into large pieces.

    2. Thinly slice 3-4 garlic cloves:
    Place 1T Olive Oil onto cooking tray,
    add veggies, garlic, salt and pepper, then mix to coat all veggies.

    3. Place in Preheated oven ( 200.c) for 20-30 mins until veggies are cooked, turning occasionally.

    4. Mix dressing:
    juice and zest of 1 lemon, 1/3 cup of freshly grated Parmesan cheese. 2 Tbs julienned fresh basil.
    {Parmesan can be omitted}

    5. Once veggies are cooked place in serving bowl and toss through dressing.


    ENJOY!


    I also adapted the Chicken Recipe to make it healthier.
    {even though it was pretty healthy as it was}

    This bread {well at least a bread inspired by this pin} is almost ready to go in the oven.  The bread from the above meal, was purchased, but wouldn't it be nice to make the whole meal {above} from scratch? I can never get bread right, any advice would be helpful. I'll let you know how it turns out next week. Wish me luck with this recipe.

    An Award.

    Yesterday I was thrilled and curious to receive an email from Tracey Fletcher King telling me the news that I had won an Award, the "Tell Me About Yourself" Award.  I'm to share with you all 7 things you may not know about me, so here goes.

    Pinteresting Art

    I've had a busy and refreshing week of spring cleaning, I got pre-occupied with tiding the house and studio and making it a bit more practical to live, work and entertain in the space. Do you ever notice once you start to tidy up one area, you really start to notice how messy the other areas are? It's all done now and I'm very happy with the result, we have a lovely guest room now and also a beautiful space outside to have a cuppa in the backyard!  So I just jumped online to get my fix of all things art, craft, design and cooking from Pinterest and I thought I'd share with you some interesting and inspiring art.

    Pinteresting: Photo Editing Tips on Fantastic All Rounder Blogs

    After my photo shot experience with my self portrait painting, I decided I needed to learn more about taking and editing good photographs. I stumbled across these great post via Pinterest and I wanted to share them with you. Oh and just to clear things up, when I say all rounder blogs, these blogs are run by lovely people who post about all different things on their blogs: life, food, art, craft, design, music, love and photography.
